Oenologue

Job Profiles

Oenologist

Part scientist, technician, legal expert, and manager, the Oenologist is a specialist in wine and the wine market. They are involved at every stage of wine production, from harvest to bottling, and provide support to both winegrowers and commercial players in the industry.

Main Responsibilities

Oenologist plays a key role in the wine and spirits industry:

  • Ensure Wine Quality: They select grape varieties and analyze the soil, advise on vine treatment and harvest dates, supervise winemaking and distillation, define preservation processes, and handle blending and bottling.
  • Evaluate and Control: They design analytical methods and perform chemical and organoleptic tests to correct any defects.
  • Tasting Professional: With a highly developed sense of taste and smell, they evaluate wines, advise producers, and play a commercial role with clients.
  • Contribute to Commercial Strategy: They negotiate contracts, promote specific vintages, and develop sales plans.
  • Manage: They lead technical teams and collaborate with winegrowers, distributors, and major retailers.

Required Skills

A sharp scientific profile and multidisciplinary skills are essential:

  • Biology of vines, biochemistry, chemical, and microbiological analyses.
  • In-depth knowledge of winemaking, preservation, and blending methods.
  • Mastery of tasting techniques and cellar-based corrections.
  • A grasp of wine law and production regulations.
  • Marketing, communication, and commercial strategy applied to wine.
  • Project management and team leadership.

Essential Soft Skills

The Oenologist must also possess key personal qualities:

  • Good physical health to maintain olfactory and gustatory abilities.
  • The ability to work alone or as part of a team.
  • Listening skills, communication, and a pedagogical approach.
  • A sense of responsibility and composure.
  • Motivation, perseverance, and a passion for wine.
  • Analytical and focused mindset.
  • Vigilance and scientific rigor.

Career Opportunities and Employers

An Oenologist can work in various environments:

  • Wineries and cooperative cellars (consulting, supervision, quality control).
  • Major retail chains (purchasing and selecting wines).
  • Manufacturers of winemaking equipment (technical expertise).
  • High-end restaurants and hotels (as a sommelier or wine advisor).
  • Freelance: as a consultant or oenology advisor.

Difference Between a Sommelier and an Oenologist

  • Oenologist: Is involved throughout the entire wine production process (scientific, technical, and strategic).
  • Sommelier: Works after production, manages a restaurant's wine cellar, selects wines, and suggests food-and-wine pairings.

Note: A sommelier works closely with the chef to create pairings that enhance both the dishes and the beverages.

Education and Degrees

  • The National Oenologist Diploma (DNO), a Bac +5 degree (Master's level), is mandatory to practice.
  • The MBA in Wine & Spirits Management (Vatel Bordeaux) is a specialized training in wine business management, accessible in the second year of an MBA in hospitality, even without prior wine-related prerequisites.

Salary

  • Entry-level: Around €2,000 gross per month.
  • Experienced: Between €2,500 and €5,000 gross per month.

Note: The salary varies significantly depending on experience, the wine region, and employment status (employee, freelancer, consultant).

Career Progression

With experience, an oenologist can advance to:

  • Wine and spirits trader.
  • Buyer for a major retail chain.
  • Chef de rang or sommelier in a fine-dining restaurant.
  • Event project manager (trade shows, tastings, international fairs).
  • Wine merchant or independent consultant.
